Title: Bratwurst

Yield: 6 Servings
5 lb Trimmed pork butt
3 1/3 lb Trimmed veal
1 2/3 lb Pork back fat
3 1/3 ts Ground caraway seeds
3 1/3 ts Ground mace
1 2/3 ts Ground ginger
5 ts Salt
1 2/3 c Milk
3 1/3 ts Sugar
3 1/3 ts Ground black pepper
10 Feet Medium (1 1/2") Pork
- casings
Mix meats, fat and seasonings in large bowl, then grind
with a fine (1/8") plate. Add milk and knead till spices
are well distributed thru the meat.
Stuff in casings and tie into 5" links.
Can leave brats raw or poach them for 20 minutes before
storing. Will keep refrigerated 2-3 days or 2 months
frozen.
