Title: Maurice's Shrimp Malacca w/Rice

1/3 c Oil
2 md Yellow onions; fine diced
1 lg Bell pepper; cored, fine
- diced
2 Celery ribss, peeled, diced
16 oz Can whole peeled Italian
- plum tomatoes
1 c Tomato puree
pn (generous) cayenne pepper
pn (generous) dried basil
2 cl Garlic; mashed

1 ts Kosher salt
2 Bay leaves
Salt & fresh ground pepper
2 tb Curry powder
Boxed or canned seafood
- stock *
3 lb (U-40) shrimp, peeled
Cooked white rice; to serve
* if available, use homemade shrimp stock
Heat the oil over medium heat in a large heavy saucepan.
Add the onions, bell pepper, and celery, and cook until
soft, stirring occasionally.
Add the tomatoes, tomato puree, cayenne, basil, garlic,
bay leaves, and salt and black pepper to taste. Bring to
a boil over high heat, and add the curry powder. Turn
down the heat, and simmer the mixture, covered, for
about 25 minutes. If the sauce seems too thick, thin it
with a little seafood stock or water. Add the shrimp and
simmer for about 10 minutes, until just cooked through.
Remove the bay leaves.
Serve over cooked white rice.
