Title: John Henry Pecan Rub

1/2 c Broken pecans
1/2 c Fresh oregano leaves
1/2 c Fresh thyme leaves
3 cl Garlic; cut up
1/2 ts Pepper
1/2 ts Finely shredded lemon peel
1/4 ts Salt
1/4 c Oil
In blender container or food processor bowl combine
pecans, oregano leaves, thyme leaves, garlic, pepper,
lemon peel; and salt. Cover and blend or process with
several on-off turns until a paste forms, stopping
several times and scraping the sides.
With the machine running, gradually add oil through hole
in lid or feed tube, blending or processing until
mixture forms a paste. Rub onto poultry or fish. Grill.
Makes enough for 3 pounds poultry or fish.
