Title: Broccoli-Cheese Soup

Yield: 4 Servings
4 c Broccoli; thawed if frozen
1 1/2 c Chicken broth
1 tb Butter
1 tb All-purpose flour
1/2 ts Fine shredded lemon peel
1/4 ts Salt
ds Black pepper
1 c Milk, half-and-half, or
- light cream
1/2 c Shredded American cheese
4 Bread Bowls (optional)

In a large saucepan cook desired vegetable, covered, in a
large amount of boiling water as directed. Drain well.
Set aside 1 cup cooked vegetables.
In a food processor or blender combine the remaining
cooked vegetables and 3/4 cup of the chicken broth. Cover
and process or blend until smooth; set aside.
In the same saucepan melt butter. Stir in flour, lemon
peel, salt, and pepper. Add 1 cup milk all at once. Cook
and stir until slightly thickened and bubbly. Cook and
stir for 1 minute more.
Stir in the reserved 1 cup cooked vegetables, blended
vegetable mixture, remaining 3/4 cup broth, and the
cheese. Cook and stir until heated through. If necessary,
stir in additional milk to reach desired consistency.
Season to taste with additional salt and pepper. If
desired, serve soup in Bread Bowls and topped with
additional cheese.
Makes: 4 servings
