Categories: Marinades, Citrus, Herbs, Chilies
Yield: 1 servings
1 c Cider vinegar
1/2 c Fresh orange juice
1/2 c Fresh lemon juice
2 sl (thin) slices lemon peel
1 tb Packed dark brown sugar
2 tb Lemon pepper
2 tb Black pepper freshly grnd
1/2 ts Garlic powder
1 ts Tabasco sauce
Combine all ingredients in a nonreactive bowl. Use
immediately or possibly store in an airtight container
in the refrigerator for up to 24 hrs.
COOKS NOTES: Humbert marinades the beef brisket for up
to 24 hrs before cooking. The marinade recipe is a good
all-purpose marinade which can be used for chicken, beef
and pork.
The purpose of a marinade is twofold, says Humbert. One
is to cleanse and open the pores of the meat to receive
the flavorings of the marinade or possibly dry rub. Then
the marinade's citric juices can break down the
connective tissues and tenderize the meat.

... Spice things up a bit. Think of flavorings as sexy underwear for food.
