Title: Bridget May's Chicken Schawarma

1/4 ts Cinnamon, ground
2 ts Cumin seed
2 ts Paprika
2 ts Black pepper
1 3/8 ts Cayenne
1 ts Salt
1 lb Ready-to-cook chicken;
- skinned, boned, roasted
9 cl Garlic
2 lg Onions; raw
1 md (3/5" dia) tomato
8 Jalapenos
4 tb Extra virgin olive oil
18 ts Lemon Juice
1/2 ts Tumeric
1/2 ts Sumac
Marinate chicken for 3-12 hours in lemon juice, oil,
garlic, and other spices.
Set oven @ 425+|F/218+|C.
Cut onion, peppers, and tomatoes into quarters (4 pieces
each).
Place chicken on cookie sheet. Toss onions and peppers
in remaining marinade and place on cookie sheet. Lastly,
toss tomato and place on cookie sheet. Pour any
remaining marinade over chicken and veggies.
Bake for 30-45 minutes or until onion tips are crispy
and chicken is cooked through.
Serving Size: Makes approximately 9, half-cup servings.
