Title: Emmy's Red Beans & Rice

1 lb Dried red beans; rinsed
1 ts Oil
1/4 c Ham; chopped
3/4 c Chopped celery
1/2 ts (ea) salt & black pepper
pn Cayenne
1 ts Dried parsley
1 ts Dried thyme
1/2 lb Smoked sausage; chopped
3 tb Garlic; chopped
10 c Chicken broth
Place the beans in a large pot - pick out any that don’t
look pretty. Pour six cups of water overtop and soak
overnight.
In a large pot, heat the oil. Add the ham and cook for 1
minute. Add the celery, salt, pepper, and cayenne and
cook, stirring until the celery is soft, about 4
minutes. Add the parsley, thyme, sausage and 3 large ham
hocks (not included in the recipe because they were
removed prior to serving).
Add the garlic, beans and stock and bring to a boil.
Reduce and simmer for 2 hours. Mash up some of the red
beans for a thicker sauce.
Serve over cooked white or brown rice.
