Title: Chard, Beet & Mushroom Stir-Fry

Yield: 4 Servings
2 tb Coconut oil
8 oz Golden beets; peeled,
- quartered, thin sliced
8 oz Mushrooms; quartered
4 cl Garlic; thin sliced
2 tb Grated fresh ginger
1 bn Chard; stems & leaves coarse
- chopped
1/3 c Vegetable broth
1/2 ts Salt
1/2 ts Black pepper
1/2 c Coarse chopped fresh
- cilantro
Hot cooked polenta or rice
Heat oil in an extra-large skillet over medium-high heat.
Add beets and cook and stir for 5 minutes or until just
tender. Add mushrooms, garlic, and ginger. Cook and stir
for 4 minutes or until mushrooms are golden. Stir in
chard and broth. Bring to boiling; reduce heat. Simmer,
uncovered, for 1 to 2 minutes or until chard is tender.
Remove from heat and stir in salt, pepper, and cilantro.
Serve over polenta and garnish with additional cilantro.
Makes: 4 servings
