Title: Sam's Cafe Pasta Aspromonte

Yield: 1 Servings
1/2 oz Olive oil
1 tb Butter
1 cl Garlic; minced
1 oz Mild Italian sausage
3 oz Tomato sauce
1/2 c Vegetables; julienned
1/2 sm Red bell pepper; cored,
- seeded, julienned
1 oz Heavy cream
1 oz Romano cheese; grated
6 oz Penne pasta; cooked
Herbs; whole or chopped,
- garnish
In a saute pan, combine the olive oil and butter. When the
butter melts, add the garlic and saute until fragrant. Do
not brown. Add the sausage and cook until brown. Add the
tomato sauce. Simmer for 2 minutes. Add the mixed vegetables
and bell peppers. Simmer for 2 minutes more.
Add the cream and three-fourths of the cheese. When cheese
has melted, add pasta, and heat in the sauce 1 minute.
Transfer to a serving bowl and top with the remaining
cheese. Garnish with chopped or whole fresh herbs.
Makes 1 serving.
NOTE: For a spicier pasta, add red pepper flakes to the
sausage as it is browning.
