Title: Thai Chicken Lettuce Cups

3/4 c Thai peanut sauce
2 tb Soy sauce
1/4 ts Crushed red pepper
2 tb Vegetable oil; divided
14 oz Bag coleslaw mix
1 ts Bottled minced garlic
1 Red bell pepper; seeded
- chopped
14 oz Can fancy mixed stir-fry
- vegetables; drained
14 1/2 oz Van whole baby corn; drained
10 oz Can chunk chicken breast
- w/rib meat in water; drain
- and halved
12 lg Romaine lettuce heart leaves
Asian-style crunchy noodles
- w/wheat & rice flours; for
- garnish
Stir together peanut sauce, soy sauce, and crushed red
pepper in a small bowl; set aside.
Heat 1 tablespoon oil in a large nonstick skillet over
medium-high heat. Add coleslaw mix and garlic; stir-fry
2 to 3 minutes or until slightly softened and lightly
browned. Transfer to a bowl.
Heat remaining 1 tablespoon oil in same skillet over
medium-high heat. Add red bell pepper; stir-fry 2
minutes. Add stir-fry vegetables, baby corn, and
chicken; stir-fry 2 minutes. 4 Stir in peanut sauce
mixture. Add coleslaw mixture; stir to coat. Divide
mixture among lettuce leaves. Garnish with crunchy
noodles, if desired
