HOW TO SHUCK FRESH OYSTERS
Wash and rinse oysters well in cool water. Place oysters on
counter, flat side up, and knock off thin edge (bill) with a
hammer. Insert an oyster knife into broken edge and slip it
around to back of oyster; sever hinge as close to flat upper
shell as possible, lift off top shell and discard.
Cut muscle from lower shell; carefully feel oyster for bits
of shell and girt, paying particular attention to the hinge.
If oysters are to be served or cooked on the half shell,
replace in deep lower shells.
Note: Open oysters over a small bowl to catch any spilled
juice and strain juice through a double thickness of
cheesecloth before using.
